Yogurt flavors, protects tandoori-inspired chicken kebabs

In Indian tandoori cooking, much of the flavor comes from the ripping-hot temperatures, up to 900 F, which send spice and smoke sizzling out the top of barrel-shaped clay ovens. The meat, usually chicken or lamb threaded on skewers, chars beautifully. But why does it emerge from the oven tender and juicy instead of incinerated? Yogurt. As part of a marinade, the dairy’s lactic acid gently breaks down the meat’s proteins in such a way that it retains more moisture during cooking without turning mushy. Thick yogurt also holds seasonings in place so they don’t run off into the fire. And, perhaps most deliciously, the natural sugars in the yogurt caramelize in the high heat. That leaves a charred, beautiful crust with a mellow tang and crispy, flavorful bits.We took inspiration from this tradition for these yogurt-marinated chicken kebabs from our book “Cook What You Have,” which draws on pantry staples to assemble easy, weeknight meals.  (CNN) — Florida Gov. Ron DeSantis said Monday that the Republican-controlled state legislature will take steps to “formally nullify” Disney’s attempts to thwart a state takeover of its special governing powers. In his latest act of retaliation against Disney, DeSantis said lawmakers will advance a bill that will “make sure that people understand that you don’t get to put your own company over the will of the people of Florida.”DeSantis moved earlier this year to take over the Reedy Creek Improvement District, the special taxing district that for half a century gave Disney control over the land around its Central Florida theme parks, and install his political allies on the district’s board of supervisors. However, Disney in February reached an agreement wit the outgoing board that seemed to render the body powerless to control the entertainment giant. POTSDAM — Britta Ernst, the wife of German Chancellor Olaf Scholz, is stepping down as education minister of the east German state of Brandenburg, the state chancellery announced Monday. Ernst, also a member of Scholz’s center-left Social Democratic Party, had held the mandate since 2017. Her plans to combat the shortage of teachers in the state “had unfortunately not found the support of the SPD parliamentary group in the state parliament,” Ernst explained in her resignation statement. In recent weeks, there had been tensions between the minister and her own parliamentary group. She wanted to cut 200 vacant teaching positions and staff them with social workers instead. Ernst also planned to reduce funds for additional school social services. SPD colleague and lawmaker Katja Poschmann openly criticized Ernst and her plans at the end of March, saying that every teaching position and school service was “indispensable.”The state premier, the SPD’s Die...
